At the helm of GECO’s kitchen are Executive Chef Panagiotis Flakas and Michelin-starred Chef Georgianna Hiliadaki, whose shared vision brings together refined Mediterranean flavors and global influences. The menu strikes a balance between elegance and comfort — from fresh seafood and handmade pastas to elevated bar bites and expertly grilled meats. Every dish is thoughtfully crafted, reflecting their commitment to quality, creativity, and seasonal ingredients.

Overseeing daily operations is General Manager Thodoris Aliferis, who ensures that every guest experience is seamless and memorable. With a trained, attentive team and a strong foundation in hospitality, Thodoris brings warmth, precision, and professionalism to every service. Together, the culinary and front-of-house teams create a welcoming atmosphere where food, service, and ambiance come together effortlessly.

Executive Chef Panagiotis Flakas started his culinary career at the age of 17. He studied in a private school and since then he has worked as a sous chef and head chef in 5 major hotels across Europe in Italy, England, Austria and Greece.

He has extensive experience in Michelin-starred restaurants such as the Fat Duck and Funky Gourmet. His experience grew in Head Chef positions in superyachts, where he was awarded in 2019 with the Gold award in “Chef competition”

Chef Georgianna Chiliadaki is the only female Greek Chef awarded with 2 Michelin stars and was recognized as the 4th best female Chef in the world in 2017. She studied at the University of Reading and the Institute of Culinary Education in New York.

Her restaurant, Funky Gourmet, earned her the 2 Michelin stars, and she is also the co-founder of OPSO, INO, and Pittabun restaurants in London. Since 2021, she has been active as a Consultant Chef on numerous international projects. She has lectured at Harvard and manages a successful Instagram account, inspiring with her recipes. Her life and work inspired the children's book "Georgianna, a Chef Counts the Stars."
